Hi! I’m Francis.
Bonjour, hola, ciao—I’m Francis, the flavor-obsessed wanderer behind European Dish. If the scent of fresh focaccia or a bubbling pot-au-feu makes you sigh with happiness, you’re exactly where you should be.
Who Am I?
I’m a nomadic home-cook who grew up on the sun-kissed Côte d’Azur, studied in Barcelona, waited tables in Rome, and married into a Polish family that treats pierogi like religion. My suitcase is half spice rack, half camera bag, and I never travel without a little notebook for scribbling down market finds and grandmother secrets.
Give me a battered Dutch oven, a kilo of seasonal produce, and a playlist that hops from Edith Piaf to Dua Lipa, and I’ll feed anyone within smelling distance.
My Journey
Early snapshots: swiping baguette crusts through my mother’s bisque, sneaking extra saffron into Dad’s paella, and begging Nonna to let me seal tortellini on Sundays. Friends asked, “Can you PLEASE write this down?”—so European Dish was born. Since then I’ve criss-crossed 17 countries, turning train snacks and tavern classics into recipes you can recreate with a regular grocery haul.
I’ve burned bouillabaisse, over-proved croissants, and once flambéed an entire fringe of eyebrows—so you don’t have to.
What You’ll Find Here
- Continental Comforts – Coq au vin you can start after work, Tuscan ribollita that tastes like nonna hugged your soul.
- Street-Food Spin-Offs – Berlin currywurst sliders, Neapolitan fried pizza pockets, Lisbon pastel de nata bites.
- Entertaining Like a Local – Mezze boards arranged the Greek way, Spanish vermouth hour, French apéro hacks.
- Step-by-Step Guides – Photos, timing cues, and “don’t panic” checkpoints so you glide from prep to plating.
- Travel-Inspired Pantry Swaps – How to fake smoked paprika when you’re out, or turn pantry beans into Provençal magic.
My Kitchen Philosophy
European food isn’t about white tablecloths—it’s about seasoned cast-iron, mismatched wine glasses, and stories shared around them. If you’ve got a chopping board, a sense of adventure, and maybe a splash of good olive oil, you can nail every recipe here. I write the way I cook: honest, a bit messy, always chasing that first “wow” bite.
